Tasty mega healthy low cal snack

My mom use to make these zucchini pancakes that I loved, but were jam packed with cheese and flour so I set out today to make something similar but healthy and I think I achieved it, even my husband loves it and asked me to make more.


Here it is

2 zucchini's
2 eggs
truffle oil
salt
pepper
nutmeg

Grate the two zucchinis with a grater with large-ish holes. Put the grated zucchini in a strainer and push out as much water as possible, squeeze the zucchini in bunches until it is pretty dry.

Put the zucchini in a bowl and add 2 eggs a tiny bit of truffle oil, you only need about a tsp- tsp and a half to get a lot of flavour, as much pepper and salt as you think you would like, you can always add more after it is cooked.

pour the mixture in to a casserole dish that will leave the mixture about 3/4 to 1 inch thick.

Sprinkle nutmeg on the top and pop it in the oven on full heat for about 10- 15 minutes, let cool for 5 and it is very tasty!
