Farro recipes?

I've started to notice a lot of Farro recipes and since I'm a big grain gal, I thought I'd ask all of you lovely MFP peeps what you do with Farro!
Any and all suggestions are welcome. I'm trying to eat healthy, filling, and tasty foods, so I'm up to all kinds of recipes (except anything that has to do with a microwave, since I don't have one in my Spanish apartment.).

I haven't made anything with farro but from what I've heard it's similar to einkorn. That I have made things with before... it's got a longer cook time than regular wheat and somewhat of a nutty flavor. I don't know whether it pairs the same as regular wheat if you're vegetarian... my gut is telling me no but double check if that's a concern for you. The last thing I made with einkorn was a cold salad with white and green beans, tomatoes, dark meat chicken, and a wine/cream sauce.0
