Feeling "stuck" - Vegetarian

Lately, I've been feeling so stuck with what to eat! I used to eat a lot of talapia and shrimp, but I'm cutting that out of my diet. Now I just feel like there's nothing for me to eat, which is absolutely ridiculous. I've been a pescatarian (vegetarian who eats fish) for 1.5years now and am only just now feeling stuck, probably because I'm cutting out the fish. SO - long story short.. if anyone has any ideas that are simple vegetarian HEALTHY dishes, I would love to hear about them! :) I know there's threads out there for this kind of thing and I'm definitely checking those out too.

    I still eat fish and seafood, but on my non fish days. I go for things like omelettes, vegetable kievs, bean and vegetable stews, sweet potatoes with cottage cheese and spinach, organic veggie sausages/burgers (or you could make your own from scratch), occasional quorn products, stuffed peppers, nut cutlets (again you can make your own) vegetarian chili, stir fries... There is still plenty to eat, though I must admit, I would miss my seafood and fish now.

    Appetite for Reduction is a GREAT vegan recipe book- all of her recipes that I've tried are wonderful, and I'm not even vegan. I'm a flexitarian.

    Have you tried the shirataki noodles? With and without tofu. I think they are GREAT!! But...you have to dry-fry them before using.
  • Vegan here and I agree on Appetite for Reduction. Love shirataki noodles but we've never fried them. We just nuke them and use them as pasta. Other suggested sources:

    vegetarian here for 8+ years.
    there are many options, a lot require to be creative about things.

    typical things i make:
    "beef" stroganoff
    sweet potato burritos
    pizzadillas
    angel hair pasta with sautéed veggies and olive oil
    stuffed shells
    baked ziti/manicotti
    avocado tacos
    stuffed peppers
    portabella burgers
    greek tortellini salad
    taco salad
    shirataki noodle stir fry
    "meatball" subs
    veggie frittata
