Dairy-free Creamy Potato Soup with BACON (0.66 cals/g)

This soup has been a hit, so figured I'd share it. It is already in the MFP DB as Creamy Potato Soup (350g)

Creamy Potato Soup (v1.0)

~10 cubed potatoes (1.5kg/3.5 lbs)
~8 strips of bacon, diced (1 package applegate farms sunday bacon)
2 stalks celery, diced (~200g)
1 large onion, chopped (~250g)
2 large carrots, sliced (~150g)
4 cloves garlic, minced
5 cups chicken broth
1 ½ tbsp flour (vary based upon desired thickness)
2 tsp seasoned salt
½ tsp pepper
¼ tsp rosemary
½ tsp thyme

Prepare veggies
Start boiling potatoes in really big pot
Cook bacon in large pot til crisp
Put bacon to side, save enough fat to saute stuff
Saute onions and garlic in bacon fat
Add 4 cups chicken broth, carrots, celery
Bring to a boil, then reduce to simmer
Dice bacon
Once potatoes are done, take half of them and puree them in blender with remaining 1 cup chicken broth
Add potato puree, bacon, and chicken broth mixture to really big pot
Add salt/pepper/flour
Stir well, allow to simmer for 15 minutes, stirring regularly
Serve, add cheese if desired

~350g serving, 8 servings

    Can you omit the bacon and use vegetable broth instead?

    That would work just fine. I also leave out the flour and use whatever herbs/veggies I want or have on hand. Recipes are meant to be played with! ;)
