Choc chilli beetroot cupcakes (16 cupcakes, 129 cals each)

You can’t taste the beetroot but it makes the muffins very rich and dark and moist (I don't think you can count these as a serving of veggies though!)

Box of chocolate cake mix
Tin of beetroot (drained and pureed)
1 egg
60g chocolate chips
60g sultanas
Pinch of dried chilli flakes.

Mix the egg and beetroot puree, add the choc cake mix and stir it all up until well combined.
Add the choc chips and sultanas.
Bake in cupcake liners/tins.

With my ingredients, this made 16 small cupcakes at 129 cals each.
You could reduce the cals by leaving out the egg yolk, sultanas or choc chips, but they add extra texture and flavour. If you don’t like chilli – leave it out.
