Mama Marions Famous Black Bean Burgers (Veg)

Ingredients
some oil for sauteing or frying if you choose to not put on the grill.
* 1 small onion, coarsely chopped
* 1 medium pepper, stemmed, seeded, deveined, and finely chopped
* a handful of chopped mushrooms
* 4+ medium garlic cloves, minced (you can go heavy on this)
* a handful of minced cilantro or parsley
* 1/2 teaspoon ground cumin
* 1/4 teaspoon turmeric
* 1 1/2 cups cooked or canned black beans, drained
* 1 cup cooked basmati rice or uncooked oatmeal
* 2 cups fresh breadcrumbs or some wheat germ (which I prefer)
* Hot sauce, such as Tabasco (we prefer Sirracha, or as we like to call it "chicken sauce")
* 1 good sized egg or 2 smallish eggs. These can be omitted for vegans, but I find they really help the burgers bind.
* 1 1/2 teaspoons coarse salt
* 1/2 teaspoon freshly ground pepper
Directions
1. Heat 1 tablespoon oil in a medium skillet over medium heat.
Add onion, red pepper, and garlic. Cook, stirring frequently, until soft and onions are translucent, about 8 minutes.
Add mushrooms & spices. Cook for 1 minute.
2. In the bowl of a food processor, combine onion mixture, beans, and rice or oatmeal. Process until well combined.
Transfer to a large bowl. Add breadcrumbs or wheat germ, and mix well.
Season with salt, pepper, and hot pepper sauce.
3. Heat 2 tablespoons oil over medium-high heat in a large nonstick skillet.OR fire up the grill
Make patties with your hands like you would a meat burger, roughly 3-4" in diameter and about 1/2" thick
Drop 1/4-cup balls of bean mixture into skillet. Flatten into 3-inch patties. Cook until golden brown, 3 to 5 minutes per side. Repeat process with remaining 2 tablespoons oil and bean mixture.
Serve immediately as burgers or crumble for tacos, burritos or salads. Delicious with avocado, tomato, lettuce, pico de gallo, roasted peppers and extra cilantro. serves well with sweet potato "fries" or grilled corn.
