Gardeners! Some help, Pls!

Okay, I planted butternut squash in mid may, and it basically took over the garden. I have 6 HUGE (7lbs each) butternuts, and sought many different sources of information about WHEN to harvest these beauties. They are light tannish orange with a VERY light streak of green left. There are also at least 3-5 more coming!

Was it okay that I just picked them all? One source said that when you can't dent the rind with a fingernail, they're ready to come out ,but said nothing of color. I took them with a 2+ inch stem on the end, which is supposed to help them keep til late winter (if they last that long!). They are very hollow sounding when thumped. Will I be eating butternut squash or did I just waste 10 weeks of work? I would hate to think that I won't really know til I open one to try to cook it!

    sounds perfect. I bet there are some recipes out there you could pre-cook, and freeze.

    I love any kind of squash!

    I want a gardent this winter.......and maybe I will try some squash. Not sure if it will grow here, Florida has very short growing season.

    Wish I could stop by and take some of those off your hands!! MMMMMMMMMMMMMMM\
