open faced smoked salmon sandwich

ingredients:
1oz wild smoked sockeye salmon
2 sliced of arnold's light whole wheat bread
0.2 oz fat free cream cheese
about 10-15 leaves of baby spinach
2 generous pinches of alfalfa sprouts

1. toast bread if desired

2. spread cream cheese on toast evenly

3. place sprouts and spinach on each slice (the cream cheese helps keep the sprouts on the toast)

4. place half of the salmon on each slice of bread.

Enjoy. The nutritional info I got by entering it all individually is:
156 calores, 20 g carbs, 3g fat (good fat I believe from the salmon), 15 g protein and 7g fiber.

Just ate it and yummy. I think the only thing I would do differently is maybe use cooked spinach. I also estimated the amounts of veggies, but there was only a limited amount of veggies I could stack on those small pieces of bread and eat it comfortably. I would also consider putting it on a 100 calorie high fiber english muffin.
