Reducing carbs while still eating fried food

I have found that if you want the breading without the carbs. Take Pork Skins, ground them up, if you do a wet dip(as in eggs) dip your choice of meat in wet dip and then in ground up pork skins. You can fry or grill, it gives a better crust than other breading. It's really good.
