Surprise Hunger and lack of hunger

This weekend I decided to go all out and try to get as much exercise in as possible, in preparation for a busy summer schedule. I did 30 minutes spinning and 60 minutes TRX on Friday, ran 7 miles in about 70 minutes on Saturday, rode my bike 30 miles in 2.25 hours Sunday, and ran 4 miles in 50 minutes Monday.
During the weekend I found that I wasn't all that hungry throughout the day. I ate my meals, had calories to spare, not as much as my workout burned, but I stayed under my goal. In fact on Sunday eating made me a little sick after my bike ride.
With a brief exercise Monday and a rest day on Tuesday I had a smaller calorie goal than the days before. But I find myself exceedingly hungry. I feel like I haven't eaten anything all day when I know I've already gotten the calories I need.
Before this weekend, my body seemed to regulate itself pretty closely to my goal. If I exercised, I ate a bit more, if I didn't, I was fine with less calories, but now I feel deprived and I don't know why. I don't know if MFP counted less calories than I really burned or if all that deficit is hitting me at the same time.
If anyone has had any experience with something like this, I would love some advice. Thank you.

I dunno, normally after I do 30+ miles, my body demands food right away. After the 100k ride last year, I went to Ralley's and got a double chicken sandwich. I dunno anything about the delay you have. My body doesn't wait around.0
