Summer dinner ideas

Does anyone have any summer dinner recipes that are healthy that they could share? I really don't want to use my oven for the next couple days. my house is a sauna... i'm sure i'm not the only one :)

    We just did shishkabobs (spell?) the other night with veggies and chicken on the BBQ. In the summertime, we often use the BBQ to grill chicken with different sauces and pair it with either a salad, fruit salad, or some kind of veggie. You can also do salmon on the BBQ with some lemon, salt, pepper and dill. Those are just a few of my favorites! :)

    We have something on the grill (chicken, steak, veggies, turkey burgers, etc.) with corn on the cob (also on the grill) and Yukon Gold potatos (I boil them first, then cut them up and put them on the grill in tin foil, but you could skip the boiling- they just take longer). It's usually about 250 to 300 calories for me :wink:

    I definitely recommend kabobs or grilling some type of fish, chicken or super lean top sirloin. Grilled zucchini (cut it in half and then slice in wedges) wrapped in aluminum foil on the grill tastes GREAT! Asparagus tastes great prepared the same way too…season with just salt & pepper for a yummy & super lo-cal side!

    If you’re not into grilling, try making tacos with ground turkey…you can also control what and how much of the extras you put on each taco. You can also try mixing the seasoned ground meat with black beans to increase your fiber intake. Chicken fajitas are also a great summer dish (prepared in a similar way with a fajita mix seen at the store) but might take a LITTLE longer at the stove.

    you could do different sandwiches and maybe some fruit or pasta on the side. or even some hummus with peppers and other veggies. the deli should have lower sodium options on meats. you can do anything to a sammy and make it filling and healthy.
