Low-Carb Entree: Margherita "Pizza" Chicken Breast

Ingredients:

1 skinless, boneless chicken breast
A few slices (or 1/2 cup shredded) Mozzarella cheese
4-6 cherry tomatoes (sliced)
Green olives (sliced)
Basil (fresh or dry)
Oregano
finely minced garlic
Salt
Pepper

Cut the raw chicken breast in half lengthwise, making 2 thinner patty-like pieces. Place chicken in a pan over medium heat with a bit of olive oil and pepper the chicken. Cover until thoroughly cooked; flipping occasionally until golden.

Remove cover and place mozzarella on top of the chicken; on low heat, replace cover and let the cheese become mostly melted.

Remove cover and press sliced tomatoes into the cheese. Sprinkle on a bit of salt, oregano, and basil and replace cover until tomatoes are cooked and melted in.

Serve with sliced green olives on top.

Enjoy with broccoli, cauliflower, eggplant, asparagus, etc... :D
