How do you eat your veggies?

I like most veggies cooked but there are only a few I can eat raw without dressing or anything. And I am trying to avoid dressing and dips because those just add a lot of extra sodium. So I need some ideas on how to make them taste better without adding a lot of extra calories or sodium!

Spices galore! I never thought I liked veggies but YUM now I do!
Lots of spices - cayenne, garlic salt or powder, onion salt or powder, lemon pepper, paprika, regular pepper.

I steam my veggies ahead of time. When I want extra flavor then I will reheat them and throw them on a skillet with some liquid aminos (soy sauce alternative), chilli powder, and pepper.0

I've recently become obsessed with roasting veggies-- especially asparagus and broccoli. I just spray with a little olive oil and use a bunch of freshly ground salt & black pepper-- sodium isn't a huge concern for me, but I do sometimes forgo the salt and they're still delicious. I also sometimes squeeze some lemon or lime juice on top. Fantastic.0

Mine is usually frozen Spinach cooked in the micro for 6 with a sprinkling of garlic on to bring out the zing. Same can apply to broccoli too.0

In stir frys, on the grill, raw, etc. Love veggies...Going to the Farmer's Market again this weekend to stock up. Bring on the eggplant!0

I am not a fan of vegetables so I put them in a green smoothie and it is great. 1/3 green vegetables, 1/3 fruit and 1/3 water.
Currently I am doing Kale, Spinach, Watermelon, Pineapple and a squeeze of lemon!0 -

I've been roasting tons of veggies in the oven, typically without any oil, and sprinkled with whatever spice suits my current whims--pepper, cayenne, curry powder, garlic powder, onion powder, oregano, chili powder, etc. Zucchini, acorn squash, brussel sprouts, and asparagus get this treatment with varying degrees of spice. Spinach and broccoli I eat raw or lightly steamed. Kale I either steam or chop very finely and eat raw with a bit of lemon juice and some of the above spices.0

I really love mine raw (especially salads). A great way to add flavor without many calories is by adding a little lemon juice, pepper (and salt, if you must) and a dash of lite olive oil.0

I eat most of mine raw in the form of a salad. I hate steamed veggies though. Most of the time, if I cook them, they will be oven roasted with a bit of olive oil.0

Most veggies, if I like them in any way, I like to eat raw and fresh. Sometimes with the sparest bit of dressing. I've been eating approximately a cup of broccoli, ten cherry tomatoes, and a dozen baby carrots with lunch lately, and for all of that use less than a tablespoon of dressing to dip. When you limit it to that little, the impact is not so much.
DH's preferred way of eating veggies, though, is roasting with spices, as others have mentioned. His new favorite thing is roasted asparagus with a tiny bit of parmesan cheese and garlic salt.
Veggies I don't like I'll mince and put into stews and soups and casseroles, where I won't taste them or get the texture, but they help to bulk up the dish with something that's not fatty or carb loaded.0 -

there's nothing wrong with adding condiments to your raw veggies! just try for options like lime juice/lemon juice, spices, mustard, and vinegars. here are some recipes i make since i've been on/off raw vegan
SALSA FRESCA: raw tomatoes, onions, chilis all diced, lime juice and cilantro. sometimes i add diced mango or pineapple
COLE SLAW: raw cabbage and carrots, with vinegar and very light mayo and mustard
BEET SALAD: raw red and golden beets with walnuts, light vinaigrette
RAW BRUSCHETTA: make your favorite bruschetta recipe (mine is diced tomatoes, onions, oregano, s&p) and instead of putting it on toast lay it on raw cucumber slices. it's delicious and super healthy.0 -
This is exactly what I was going to post! I have discovered roasted vegetables are great! I especially love carrots, green beans, asparagus and even broccoli this way (olive oil, salt, pepper, or lemon pepper). They are delicious!0
