Vegetarians please tell me....
your favorite healthy recipe(s). I am going to go vegetarian for health reasons and wanted to know where to get started with meals and snacks. FYI I can not eat nuts due to my daughters severe nut allergy.

I really enjoy the blog site www.pinchmysalt.com.
It's not strictly vegetarian but there are vegetarian recipes on there along w/healthy options (baking w/whole wheat flour, etc.), and you can search by vegetarian, sides, etc. Some of the dishes that I enjoy are meant to be sides but I'll make it a meal, and I've tested quite a few of these. All have been easy and delicious, enjoy!0 -
I like:
Rattatoulie (likely not spelled correctly) - Just slice eggplant, zucchini, green peppers, tomatoes, and onion (if you like) layer in a pan, drizzle lightly with olive oil, cover and bake at a low heat for about an hour. Delish.
I also make a nice rice pilaf that has chickpeas, green onions, carrots, mushrooms, and brown rice.
There are pleanty of great sites out there, as well as nice cookbooks.0 -
First you need to determine what type of vegetarian you'll be trying out.
Will you just cut out red meat and pork? Will you cut out chicken? Seafood? Eggs? Dairy? Honey? Or all animal by-products?
It might be a little hard to do without nuts...but not impossible. I eat nuts/nut butters/ nut oils at least 2 times a day...but there are alternitives.

My best suggestion is to check out some veggie cookbooks from your local library. You will also learn to cook with protein alterntatives like tofu and tempeh with the help of cookbooks. Faux meat products from Morning Star farms are a great way to transition to a meat free lifestyle. I still eat fish, dairy and occasionally eggs, so I'm not a full vegetarian.
You can also google some veggie cooking websites for ideas. You can make most of your favorite comfort foods meat free, just be creative in replacing the meat for beans, tofu, meat alternatives.0 -

Yeah I love nuts and it is already hard not eating them lol. I do eat sunflower seed butter (instead of peanut butter).
I have looked up book at my library and will be going there tonight to borrow some.
Beth- That sounds really good! I will try that this weekend!!!
As far as what kind of Vegetarian I will do dairy, egg and maybe a little fish (not a big fan YET).
