Black beans

I have recently learned to love black beans and I try to eat them at least once a week....I need new ideas on how to eat them,....wanna jazz them up! TIA :)

    I like to add onion powder and garlic powder to canned black beans and then simmer them on low heat to cook out some of the liquid. I will then have them as a side. I also like to warm them up and put them on a 80 calorie tortilla shell with salsa, shredded lettuce, and a little shredded cheese. SAY NO TO THE SOUR CREAM. The burrito will be great without it. You can add other raw veggies like bellpeppers (all colors) to make it seem like you are eating more. A few extra raw veggies are almost like free calories.

    My fav go to black bean meal is a black bean quesadilla. I take, 2 white corn (or yellow) tortillas, take a 1/4 cup of black beans (always rinse mine to get rid of as much sodium as possible) 1/4 cup of shredded cheese (mexican blend) and pickled jalapenos (about 3-4) chopped. Put one tortilla down in a hot pan with a spray of pam cooking spray, beans on top of that, add cheese and jalapenos and let it cook till nice and warm. Place other tortilla on top, spray with another spray of pam, flip and if you can have something press it down to bring it all together. Once golden brown and crispy, remove, cut in 4th and serve with a tablespoon of fat free sour cream and fresh salsa. YUM! Have had this 2 days in a row this week, might do it again ;)

    An easy way to "jazz them up" is to sprinkle some feta or mexican cheese on top. Any kind of crumbly cheese really.
    Makes them even better!!

    You may or may not want to try it, but there are recipes for black bean brownies. If you Google it, you will find several. I am told they really do taste pretty close to the real thing. :)

    Mmmm, I love the black beans! I like them best in the traditional Cuban style:

    Wash the beans and soak them in water with one green pepper. When they’re swollen
    from soaking, cook them in the same water until they are soft (about 45 minutes). Heat
    the oil in a skillet. Chop the onion, garlic, and green pepper and sauté them. Add about
    one cup of beans to the skillet and mash them well (or blend them together with the
    sautéed onion, garlic, and green pepper). Add the blended mixture to the bean pot. Add
    salt, pepper, oregano, bay leaf, and sugar. Allow to simmer about one more hour. Then
    add the vinegar and dry wine, and cook on low heat for another hour to desired thickness.
    If they are still too soupy, take the top off to evaporate some of the liquid. Add the two
    tablespoons of oil right before serving. About 8 servings.

    (You can skip the oil and it doesn't make a huge difference)

    This is absolutely what keeps me from ever buying beans in a can again. Once you try this recipe, it's hard to go back. Fantastic.

    black bean chicken tostadas!
    For the chicken you boil it in low sodium chicken broth with half an onion sliced for about 25 min or til done
    Then you shred it
    you can stop there or if you want more flavor you can saute the other half of the onion (diced) with some minced garlic chopped and seeded tomato cilantro and cumin
    then you add the shredded chicken with 1/2c of your broth and 2T of tomato sauce let it simmer and your done! I like to add citrus so I add some fresh squeezed lime juice.

    *If you buy tostada shells they sell baked in some stores, if not you can bake them as opposed to frying them and they are just as good.

    Also there are numerous black bean burger recipes and those are delicious!

    You can use plain greek yogurt in place of sour cream. Tastes almost the same and adds healthy protein and probiotics. I prefer 2%, but you can use fat free if you see fit.

    This may sound gross, but the recipe intrigued me and now I am addicted. The South Beach Diet Black Bean Brownies are awesome!! Its in one of the cookbooks but if you google Black Bean Brownies I am sure some alternate recipes pop up. They are a great substitute and have no flour so they are low cal.
  • In a pot dump a can of black beans(drained) and a can of rotel. Serve over rice if you like. Top with scallions and light sour cream.

    I eat them from the can. Goodness I love them. I have been told to add this or that but I can't imagine it would taste better than just a plain old side of beans. mmmm.

    I like them with my over easy eggs in the morning. Throw in a little cholula sauce or maybe some salsa and some sautéed spinach. Yummy.

    I love black beans! Just had them tonight with Quinoa and shredded chicken...just all thrown in a bowl together. I also like to make a "burrito" with shredded buffalo chicken, black beans, some cheddar cheese and a little ranch dressing...so good and filling! I cook the chicken in the crock pot with my favorite wing sauce and then shred it. I've also made this on a pizza, as crazy as it sounds!

    This is probably my favorite black bean recipe and I often serve it as a side w tacos.

    “Refried" Black Beans 4 servings- approximately 113 calories per serving
    1/2 medium onion diced
    3 cloves garlic minced
    1 can low sodium black beans
    .5 cup of stock or broth (1 cup if not using liquid from beans)
    1 tsp lime juice

    Sauté onion and garlic for 5 minutes over medium heat, add beans with liquid ( if not using low sodium beans drain them before adding and add an extra 1/2 cup of stock) and the stock. Bring to a boil, reduce heat and simmer for 20 minutes or until most of the liquid has evaporated, add lime juice and mash with a potato masher.

    I sometimes also add a couple dashes of cumin, chili powder and/or fresh cilantro depending on what I have on hand.

    smash up some black beans, mix in some salsa and some powdered cumin. It makes a great dip for putting on tortillias or baked chips! :) I sometimes make it into a relish type dip by adding corn and leaving the beans whole. LOVE my black beans.:love:

    I am addicted to black beans, cauliflower and salsa with a tbsp of sour cream on top! So yummy.

    I just put cauliflower in my little veggie chopper until it's real small, cook that in microwave with a couple tbsp of water. Add black beans and salsa, heat up and top with sour cream. Seriously good!
