High Protein Pancakes
I got this recipe from another forum I use and its awesome- when I want pancakes that are giving me benefits besides swelling in my belly. Its kind of a lot of work but so worth it.
In a blender
put 2 scoops of Plain Oatmeal (uncooked) and blend
then add
1 1/2 scoops of whey protein- (I have done it with chocolate and unflavored both were good)
some cinnamon
1 1/2 cup of whole wheat flour- NOT ENRICHED
Blend again
Pour into a mixing bowl
To that Add
2 egg whites
1/2 cup skim milk
1/4 cup of fat free plain yogurt
mix and cook like normal pancakes
****You may need to tweak the ingredients the guy used his scooper from his protein bucket****** regardless they are so good.
I top mine with can't believe its not butter spray and sugar free syrup-- YUMMMMMMMMIEEEEEE
This makes about 4-6 pancakes- I eat 2 and put the others in a bag for me to bring to work in the mornings.

I have a recipe too that is also really good...especially if you don't have whey powder handy or don't like it. These are delicious!!
1 cup low fat cottage cheese
1/2 cup rolled oats (quick oatmeal works fine)
6 egg whites
4 packets splenda
1 t. vanilla
cinnamon
Mix together in a blender until smooth. Heat skillet and spray with Pam butter flavor cooking spray. Pour batter into smaller pancakes and I always add a few blueberries!! Cook until golden brown and then flip. You might need to re-spray the skillet between batches so the pancakes don't stick. This recipe makes about 8 small pancakes and serving size is about 2-3 pancakes. I often double the recipe so I have enough for the week and dont even need syrup...when I heat them up in the microwave, the blueberries sort of ooze out and make their own syrup! Sooooo good!0 -
You can also do Plain Oatmeal with cinnamon and egg whites mix and make pancakes0
