Tried and true risotto recipes?

I'd like to make risotto to accompany chicken piccata tonight. I've never made it before so any tried and true veggie recipes? Any tips? Thanks!

I used to make risotto all the time. It's really more of a method then a recipe. First, heat up about 4 cups of broth. I used chicken but you could easily substitute that for veggie. Bring it to a simmer and leave it warming on the stove. I start out sauteing an onion in a tablespoon of butter or olive oil until it is translucent. Add about a cup of arborio rice. It HAS to be arborio or it won't be right. It is short grained and has more starch. stir the rice for about a minute with the onions. Start adding the broth about a half cup at a time. When that gets cooked in add the next half cup, stir well after each addition, keep doing this until you have used all of your broth. When it is finished it will be creamy and the rice will be tender. If it isn't add water half cup at a time until it is. Taste for seasoning and adjust accordingly. If you are using a commercial stock or broth you probably won't need to add salt. I always finish with grated parmesan but it isn't necessary. I also like to add fresh peas the last five minutes or pureed winter squash and a little nutmeg.
It is a little time consuming and not exactly low calorie, but totally delicious.
