Dairy/egg free crock pot recipes, please!

I'm looking for crock pot recipes that are dairy and egg free! My husband and I are tired of the same old recipes and are looking for new ones Any type is great - soups, casseroles, stews... whatever! Thank you!

Spicy tortilla soup!
onions, garlic, jalapeno's (canned is easy but fresh is better) hot pepper sauce chicken of veggie broth and tomato sauce.
You could stir in chicken and or rice if you wanted it heavier
Serve with any tortilla strip, or shredded cheese, or chopped avacado.... it's endless possibilities!0 -
That sounds delicious! My husband doesn't need it to be dairy free so we could totally add cheese and sour cream after for him! Thanks! The avocado sounds divine at the end! :happy:

This might not be helpful, but you can literally throw anything in the crock pot. I put chicken in with a small amount of water and seasonings, then chop it up and add bbq, when I come home from work and we have chicken bbq for dinner and lunches.
Chicken +Rotel (or any crushed tomatoes) = Yummy, think tacos, enchiladas
Sweet Potatoes wrapped in aluminum foil
Really just throw whatever you have into it!0 -

Thanks for the tip - my problem is, without a recipe, I never know how LONG to put things in for. I've had things cook too long and they are mushy! And aluminum foil in a crock pot?? Never heard of it! How long do they need to cook for? Amazing!0 -

make chili! there are loads of decent recipes on the internet for that depending on your preferences for meat/meatless and favourite veggies. I like tossing sweet potato chunks into my chili instead of serving it with rice or another carb.0

Try this - it's a huge fave at our house! I don't bother with all the sauteing, etc. I just throw it all in the crock pot and let it cook! My boyfriend likes it over rice - I eat it in the bowl without rice. Either way works!
African Bean Soup
2 TBSP soy sauce (3)
1 onion, chopped
3LARGE SWEET POTATOES, peeled and diced
3 large carrots thinly sliced thinly sliced 2
1 red bell pepper, diced (or 2)
1 celery stalk, thinly sliced
2 cups crushed tomatoes
3-4 cups vegetable stock
1 15 oz can of garbanzo beans
½ cup chopped fresh cilantro
3 TBSP peanut butter or almond butter
1-2 tsps curry powder (or more)
Cooked brown rice for serving if desired.
Heat ½ cup of water and soy sauce in a large pot. Add onion and sweet potatoes. Cook 5 min over HIGH heat, stirring occasionally. Add carrot, pepper, and celery. Cover and cook 3 min, stirring occasionally. Stir in the tomatoes, stock, beans, and cilantro. Blend PB with 1/3 cup of water and add to the soup with the curry powder. Stir to mix. Cover and simmer at least 10 minutes. Serve in a bowl with or without rice.
OR – chop everything up, put in crock pot, cook on High for at least 6 hours or Low for 8-10 hours. *************
Variation: for Stir-Fry veggies w/ peanut sauce, reduce tomatoes to 1 cup and eliminate stock. Serve with rice, pasta, couscous, or in a wrap.0 -
Another superfood-filled soup you can make with your crockpot! Throw it all in, but add the tofu at the end.
Bean, Kale, and Tofu Soup
2 cans white navy beans
2 cans low sodium chicken broth (Swanson's)
4-5 C fresh kale, chopped
1/2 C fresh parsley, chopped
1 medium yellow onion
8-9 large garlic cloves
1 tsp each rosemary and thyme (dried)
salt and pepper to taste
Additional:
1 12-oz. package firm tofu
2-3 Tablespoons olive oil
1 8-oz. can tomato sauce
Mince onion and garlic, and sauté in olive oil
until soft in large pot. Wash and chop kale.
Pat dry with towel.
Add to pot that contains the onion and garlic.
until wilted. Stir slowly over low heat. Now add
1+1/2 cans of beans and soup, also add cilantro,
parsley, and tomato sauce. Add any additional
seasoning. Simmer for 5 minutes. Take
remaining beans and broth and blend (in blender,
if you have one). Cut tofu into bite-sized cubes.
Add blended beans and broth and tofu.
Simmer for 15 minutes.0 -

(Almost) Vegetarian Lettuce Wraps
Calories (serving size = 3 wraps): 207, Protein: 15g, Carbs: 22g, Fat: 9g, Sodium 1029mg, Potassium: 423mg

Serves ~5 (or in my case, 2).
For this recipe, you will need:
Crockpot or slow cooker (with crock pot liner if possible to make cleanup easier)
Food processor or veggie chopper (or knife and cutting board and a whole lotta fine chopping skills)
Measuring spoons and cups
Ingredients:
2 leeks, finely chopped
1 cup shi take mushrooms, finely chopped
2 stalks celery, finely chopped
1 tsp toasted seasame oil*
2 tbsp oyster sauce*
2 tbsp Hoisin sauce*
3 tbsp low sodium soy sauce
1/2 tsp black pepper
4 tbsp water
8 ounces asian salad mix - can be found in the produe section
1 red bell pepper, finely chopped
1/2 lb salad shrimp (the really tiny ones)
3 tbsp unsalted cashews, crushed
15-20 leaves crisp romaine lettuce
* these items can be found in the asian food aisle of major grocery stores
Directions:
Place crock pot liner and press air out of the liner
combine all ingredients EXCEPT SHRIMP in very large mixing bowl and mix until everything is lightly coated with sauces
Dump mixture into crock pot. Cook on low for 3 hours.
With about 20 mins remaining, add shrimp and mix well. Let go for another 20-30 mins until shrimp are warm.
To serve, spoon large cooking spoonful (about 1/2 cup) into a leave of clean dry romaine lettuce. Roll up and eat like a soft taco.

You may have to tweak the sauce to your liking but here's the basics for chicken adobo in the crock pot
4 boneless breasts (i use them still frozen)
2 cups water
1 1/3 cup soy sauce (I use reduced sodium)
1 1/4 cup white vinegar
4 bay leaves
1 whole bulb (not 1 clove) garlic sliced thin
Black Pepper (I have a grinder and did about 15 turns on it)
cook low for 5-6 hours.
I serve mine over broccoli (steamed) but it's normally served over white rice0 -
