I have a question, if you go over your calorie count by say 300 calories one day, should you then try to eat less the next day so that the average total for the week is on your calorie level?

You don't really have to. One day over won't hurt you, but I usually do because it makes me feel better!0

More generally try and be on target over the course of the week. Do what you need to do to make this happen i.e. if you eat 500 over target one day eat 500 less spread out over other the days. Whatever works for you.0
