what "everything" are you trying to watch? I was kind of in a rut, and wasn't losing very fast...now my main goals are keeping carbs low, and having a decent (800+) net calories at the end of the day. I lost 9 pounds last month...but only 7 pounds in the 3 previous months where I did not watch those factors...0

It could be the types of foods you are eating. Hard to say with your food diary being closed.
High sodium and processed foods can cause you to be stuck. Not enough water, So many things...0 -
I don't think it is possible to watch EVERYTHING...I would pick the most important things and watch those for now. If you are watching your carbs, other things are going to have to go up to compensate. My fat, protein and fiber are a little higher than MFP suggests, but for me, keeping the carbs low and the calories higher is what is important to me.
basically, do what works for you!0
