I also really like lettuce wraps! They're so easy. You just peel off a leaf of lettuce and fill it with whatever you like. I like to make taco lettuce wraps. Here is the recipe:

I made a great stir fry with soba noodles. They have a lot of protein in them so it really boosted my protein and for 1 cup serving it came to about 215 calories. Included beef, onions, water chestnuts, bean sprouts and a little bit of tamari and sweet red chii sauce.0

I make an excellent BBQ Meatloaf. Depending on what we have in the fridge, I make it with ground beef or ground turkey.
We have that with some steamed veggies on the side.0 -

make a mini pizza using whole wheat pita bread
2 T no salt added tomato sauce
add a bit of cheese, either a tiny bit of feta or some mozzarella
and veggies of your choice (I like baby spinach and mushrooms)
you can even add a tiny bit of pineapple or some meat
put it in the oven at 450 until cheese is melted, you can broil the last few minutes if you want the bread a bit crunchier0 -

skinnytaste is probably the best healthy recipe website I have found. I have made tons of things from it. They are all easy to make and SO good. Even my picky husband and 6 year old son eat it. Some easy favorites -
~ Frozen boneless/skinless chicken breasts in the crockpot with whatever you want for flavoring-salsa, marinade, bbq sauce, italian dressing, chicken broth and seasonings, buffalo sauce. Cook on low for 6 - 7 hours. Doesn't get easier.
~ The homemade chicken nuggets from skinnytaste
~ Lettuce wraps with chicken breast (I buy the frozen cut/cooked Tyson). We usually throw in tomatoes, cucmbers, mushrooms, carrot shreds.
~ Mix cut up chicken breast, baby carrots, mushrooms, cut up onion, green/red peppers and Italian dressing. Put in a 9x13 pan and top with grated Parmesan cheese and bake on 325 for about 30 minutes. It makes a lot so I usually make it on a Sunday night and eat it for lunches for the week.0 -
I also use this 6 week menu! All the dinners sound yummy and aren't weird salads or a bunch of expensive rare veggies. I really like it.
