    chicken parmesan roll ups

    We're going to pound out some chicken breasts until they are flat, sprinkle them with cheese and seasonings, roll them up, and place them in a pan, with homemade spaghetti sauce, and more parmesan cheese. I hope it turns out well. It's a new thing for us.

    Pork is cooking away in the crockpot. When we get home tonight we will have some nice fresh pulled pork. And, homemade sweet potato fries.

    Yesterday dinner cucumber w/ tuna & avocado,
    boiled some cauliflower then mashed it up with some texmex cheese. :)

    I'll admit I'm not much fun tonight (or this week or most of this month). Dinner on the run tonight. Work til 5:15, kids have dance 5:30-6 and 6-6:30 and a meeting at 7. Hope to make a lovely sandwich on a multi grain sandwich thin or a bowl of cheerios to eat somewhere in there. Otherwise 9:30 will be a little too late to eat!
