Broccoli and Leek soup
Makes about 4 400ml servings. I'm quite naked when I cook so I've been estimating fluids and time Approx 200 calories per serving.
1.6l Chicken stock
2 broccoli heads, chopped into florets
4 leeks, well trimmed (the Sainsbury's pack of 5 go well)
Salt and pepper to taste
2tbsp olive oil
1. Heat up the oil on medium in a large pan. Add the finely chopped leeks into the pan and fry for 2 minutes.
2. Add the broccoli, and keep stirring for about 5 minutes.
3. Add chicken stock, and bring to the simmer. Cover partially and simmer for 15 minutes.
4. Blend in batches and return to the pan to heat up. Serve with bread and butter if you like... it's got hardly any calories in it!
