Garbage Soup

If you like tomato based soups, then you will probably like this. Its called garbage soup, because basically you put all your leftovers (garbage) from the fridge, in the soup. This way you dont waste anything, and you use it in a new way that mabye you have not tried before!
This is how I make mine.......however the nature of this soup will be different each time you make it, depending on what you have leftover and what your personal tastes are!
V-8 (I use one whole bottle, but use whatever amount fits your family)
Lean ground beef (or ground turkey if your not into red meat/beef) aprox 1 pound. (You could use chicken ipo the ground meat if you prefer or in addition too)
Regular or turkey bacon.
Any beans you happen to have on hand...Navy,Kidney, etc...
Rice brown or white
Any fresh (or frozen if you dont have fresh) veggies you have leftover in the house. (carrots,cauliflower, broccoli,celery, cabbage etc)
Diced up onions if you like them.
Brown the ground meat/bacon first if you are using it. (add a lil bit of the meat juices to your soup, it really flavors it well)
Dice up all the veggies. Large or small, depending if you like a chunky soup or not.
Simmer V-8 in a soup/stew pot on low heat. Or better yet use a crock pot and cook for the next day!
Toss in all meat/veggies/onions.
Toss in beans so they have time to cook.
Rice and noodles (if you so choose) are added the last 45minutes.
SIMMER for aprox 2 hrs on LOW!
Or simmer in crockpot overnight. (this is how i prefer it. Always better the next day)
By now you get the idea........ANYTHING you have leftover in the house. Its up to you and your tastes. Experiment
Season it to your taste...I prefer to put an envelope of onion soup mix in for flavor.

My mom used to make this. She kept a container in the freezer, and would add those inevitable couple of spoonfulls of vegetables from dinner that were leftover to the container in the freezer until it was full. She would usually make pot roast, then use the leftover potroast and gravy as the base, along with canned tomatoes (she didn't do the V8). Same idea, though. We called it "Kitchen Sink Soup" As in, "everything but the kitchen sink,"
