Healthy things to do with extra lean ground beef

I like to put it in a pita with Tatziki (?), cucumbers (and other veggies, whatever you like), tomatoes and cheese ummmmm, very tasty. I also make homemade spaghetti with whole grain noodles and diced tomatoes, also very yummy.

I took out ground beef for dinner and was planing on making meatloaf but now I'm totatlly not in the mood for it! Any other suggstions?

Mmmm, meatloaf sounds good. We rarely have that. But, tacos or something like goulash would be good. Chili is always good but I like mine to cook for awhile.
Now that I mention it - goulash may be what we'll have tonight.0 -
Yield: 6 Servings
Ingredients
1 lb Ground beef
12 oz Chunky salsa (1 jar)
1 c Sweet corn
3/4 c Miracle Whip(R
) 1 tb Chili powder
2 c Tortilla chips (crushed)
2 c Colby/Monterey Jack cheese
Instructions Heat oven to 350F. Brown meat; drain. Stir in salsa, corn, Miracle Whip(R) and chili powder. Layer 1/2 meat mixture, chips and cheese in 2-quart casserole. Repeat layers. Bake 20 minutes or until thoroughly heated. Top with shredded lettuce and chopped tomato, if desired.
I just found this online, I think if I used Fat Free miricle whip and low fat cheese it wouldn't be that bad...0 -

Use the regular fat cheese. When you take the fat out of dairy it loses a lot of its nutritional value. The difference in the fat isn't that much between the two to worry about it. But it does sound good!!!0
