Hi

I buyt the vita-muffins in the store which can be pricey...has anyone bought the mix?
Anyone know of a recipe similar..that i could try on my own?

    I make a homemade protein bar that actually tastes pretty good. The recipe calls for bananas which I'm not a huge fan of but the peanut butter makes it better. I use a soy protein mix that has about 24 added vitamins and minerals so it's probably pretty close to the same idea. Anyway, here's the recipe:


    HOMEMADE CHOCOLATE PROTEIN BARS

    200 g old fashioned rolled oats
    30 g chocolate flavoured soy protein (try to find one with the added vitamins/minerals)
    2 tbsp all natural peanut butter
    3 egg whites
    300 g bananas (about 2 average size)
    1 tbsp honey (natural version)
    100 ml skim milk
    1 tsp cinnamon


    Preheat oven to 180 C
    Mix oats, protein & cinnamon
    Blend egg whites, PB, mashed banana, milk & honey in blender (or mixer)
    Combine with dry mix and stir thoroughly. Spoon onto greased cake tin (I use wax paper and line the tin and then when I lift it out it comes out in a block)
    Bake for 15 mins
    Remove and cool slightly before cutting into squares

    Nutrition per bar (makes 8 bars)
    Calories 147
    Protein 9.5 g
    Carbs 21.3 g
    Fat 3.4 g


    Anyway, like I say I'm not a huge fan of bananas but these taste ok. I do have plans to see if I can make something similar with strawberries (love those). I'll try it this weekend and let you know if they turn out. (I'll post the recipe if I do)
