Grilled Ratatouille Pasta

So Everyday Food had this in their magazine this month and I made it tonight. SO good. And the perfect summer dinner. Kind of carb heavy, but that's ok sometimes.

1/2 lb whole grain curly pasta (whatever, its suppose to be fusilli but who can find that?!)
3-4 Tbsp olive oil
Salt and Pepper
1 eggplant
1 large zucchini
1 large red bell pepper
4 large tomatoes
1/2 red onion
3-4 Tbsp Balsamic Vinegar (white, but regular would work too it will just look darker)
more oil and salt and pepper
1 handful parsley chopped

Preheat your grill on medium. Slice all your veggies in long slices, onions in big thick rings, and tomatoes in half. Drizzle all with olive oil, salt, and pepper. Grill until slightly charred and tender. Let cool and chop into small pieces. Meanwhile cook your pasta and reserve 1 cup pasta water before draining. Toss pasta, reserved water, veggies, oil, vinegar, and parsley. Serve with grated parmesan. Serving size is 1/4 the recipe or 1 1/2 cups.
