just bought hungry girl's new cook book: 200 meals under 200 calories.
i tried the chocolate chip cookies which are actually called so-good chocolate chip softies and with good reason. they taste fantastic but have more of a muffin consistency than cookie. The only changes i made to the recipe was to use 4 tablespoons of regular semi-sweet chocolate chips instead of 2 1/2 as well as using regular granulated sugar instead of splenda. the cookies came out fantastic and i will definitely be making them again:
Ingredients:
3/4 cup whole wheat flour
1/2 splenda (granulated)
6 tablespoons no-sugar-added applesauce
1/4 cup canned pure pure pumpkin
1/4 cup egg substitute
2 1/2 tablespoons mini semi-sweet chocolate chips
2 tablespoons brown sugar (not packed)
3/4 teaspoon vanilla extract
1/4 teaspoon baking soda
1/8 teaspoon salt
Directions:
1. Preheat oven to 375 degrees
2. In large mixing bowl, combine all of the dry ingredients except for the chocolate chips (flour, splenda, brown sugar, baking soda, and salt). mix well.
3. In medium mixing bowl, combine wet ingredients (applesauce, pumpkin, eggs, vanilla)
4. Add wet mixture to dry mixture. Stir until completely blended. Fold in chocolate chips.
5. Spray large baking sheet with nonstick spray. Spoon batter into eight evenly spaced circles. Bake in oven for about 10 minutes, until cookies appear fully cooked and feel firm.
