freezing cauliflower
I bought a head of cauliflower today, in order to make cauliflower rice within the next few days.
I won't be eating it today or tomorrow though, and I'm scared it goes off :-D
Anyone out there who knows if it's good to freeze? I'd chop it into chunks and wash it first...

Definitely! Cut it up and blanch it for a minute in boiling water, let it cool a bit then put it in freezer bags in portion sizes you like.0

Blanching stops enzymes from degrading the taste, texture and color of your vegetables. It also helps to kill any bacteria that may be on your vegetables.
