I know there are alot of people who watch carbs closely and this may be to many for you however this is a very tasty meal. You can even make it up in small portions as you like.
Cooked rice of your choice
Cooked lentils to your liking
avocado or guacomole ( this is a good fat don't let it scare you, if you don't like it don't add it)
Onion or any other vegie you like
Then to top it salsa or dressing
Cheese is also tasty on it
Since the items are variable your calorie counts and everything are going to be also. But for a meatless meal it doesn't have much fat and very filling.
