cauliflower noodles
I tried this the other day and absolutely loved it! Great for Lasagna!!
1 small head cauliflower shredded
2 eggs (can use just egg whites)
1 cup mozzarella cheese.
steam the cauliflower and drain it. squeeze extra water out. mix in egg and cheese.
On a tinfoil covered tray arrange cauliflower into long noodles (you can chose length and width desired)
bake at 350 for 10-15 minutes or until edges are golden brown.
