What exercise should I do?

Hello, I'm new here and I was wondering if anyone could help me with my exercise plan.
Info: I'm an apple shape and hold a lot of weight around my upper half.
Being an apple shape, I don't particularly want to add muscle to my legs but I want to lose it from the upper half (especially the back!) I don't really have a bum either
is there any way I can sort of grow one? 
I love the 30 day shred so I can be doing that, I have a new bike which I want to takeout. I can't really do running as I have a problem with my knee and it hurts sometimes.
Can anyone help me please?
