Mom Needs Nutritional Advice for Water Polo Athlete.

Anybody out there with sound nutritional advice for me, I have a son who is a water polo athlete. He wants to be on top of his game, conditioning and training is not the problem; I need to educate myself about his nutrional needs. The only things I Know is that carbs are good for him & that Protein shakes are ready for him after workouts & training practices - Period.
He conditions 2 hours in the pool before school and 3 hours after school for 5 days a week, unless he has a game where half the time he plays 2 games back to back from start to finish - as a goalie. He comes home starving. I need to understand what he needs to eat and when to eat, to not " bonk" before or during training/games.
