100 calorie creme brulee

ok so its actually 104 calories but 100 cal sounds so much snazzier.

Here's another one from the hungry girl cookbook and it turned out great. I wouldn't go comparing it to restaurant quality because you can only cut so much fat and calories out of something before you notice a difference in taste. But if you want a nice little desert, this is a good place to start.

Ingredients:
1/3 cup fat-free liquid egg substitute
1/2 cup fat-free evaporated milk
1/2 cup fat free half and half
3 tablespoons plus 1 teaspoon brown sugar (not packed)
1 1/2 teaspoons french vanilla powdered coffee creamer
1 1/4 teaspoons vanilla extract
4 teaspoons granulated white sugar

1. Preheat oven to 325
2. In medium unheated pot, combine evaporated milk, half and half, and brown sugar. Bring to medium hear, then stir and cook until sugar has dissolved and milk mixture is hot. Stir in powdered creamer, blending well. Remove from heat.
3. In large bowl, mix egg substitute and vanilla extract together. Gradually whisk in the hot milk mixture/ Set four 4-oz baking ramekins or custard cups in a deep baking dish. Evenly distribute the custard mixture among the cups.
4. Carefully pour hot water into baking dish, around cups. The water should come up halfway up the outsides of the cups. Carefully transfer pan to oven and baked for 28 min, until custards are set.
5. Remove custard cups from oven, allow to cool, and then refrigerate until completely chilled, about 2 hours.
6. Once ready to serve, top each cup with 1 teaspoon white sugar. Using kitchen torch, caramelize sugar. *

*broiler works well too if you don't have a torch

    this sounds wonderful. we love creme brulee, so we'll have to try this low cal option.

    But what is fat-free half and half? :huh: Is it the same as skim milk?
