Kale Salad
You will need
1 head of collard greens or kale
3 carrots, shredded
1/2 cup pine nuts
1 clove garlic, minced
1 cup of cherry tomatoes, sliced in half
1/4 cup olive oil
Juice from 2 lemons
salt to taste
To shred the kale:
1. Wash the leaves, then cut out 2 to 3 inches of the really hard ribs (from the bottom upwards).
2. Stack the kale leaves as evenly as possible.
3. Now working LENGTHwise, roll the leaves very very tightly like you were making a cigar
4. With a VERY sharp knife, shred razor thin slices off the roll
Now mix all of this up, put it in the fridge overnight (important) then eat it up.
It is an excellent salad! And a nice change from plain old green salads.
Even my grandkids will eat this.
