Low calorie, Spinach and Cheese breakfast muffins

This is a humming Bird bakery recipe that I adapted to fit with my diet =)
Its one of my favourite breakfast snacks, so enjoy!! =) Hope you like them

30g Lurpack - Lighter - Lightly Salted (butter)
1 Small red Onion, finely chopped
360g Plain Flour
21/2 Teaspoons of Baking Powder
1 Teaspoon of Cayenne Pepper
6 Baby Bell Light, Grated
1 egg
220ml of Semi Skimmed Milk
130g of Baby Spinach

Preheat the over to 170°c (325°f) or gas 3.

Melt the butter over a pan, and fry the onion and set aside.

Put the flour, cayenne pepper, baking powder and baby bells into a late bowl and slowly add a wished egg and the milk to the mixture.
Add the spinach and the onion and stir with a spoon until evenly dispersed.

Spoon the mixture into 20 small-medium muffin (cup cake) cases and cook for 25-35 minutes =)
