How long will homemade hummus stay fresh?
It's Saturday night right now and I just finished making hummus in the blender. It contains chick peas, garlic, tahini, lemon juice, and smoked paprika. It's in the refrigerator right now.
My question is: Will this still taste as good if I take it to a potluck Tuesday afternoon? Or should I make a fresh batch on Monday?

It will not taste as good, it will taste better because the spices will "marry".0

The typical rule on prepared food is that it is safe for 7 days if temperature controlled. I learned that from food and sanitation certification classes. I buy all natural prepared hummus and eat it up to 7 days after opening and it always tastes as good as the first day and there aren't really any more ingredients than what you have listed. I bet three days will be ok. At the very least you won't kill people. : )0
