How long will homemade hummus stay fresh?

It's Saturday night right now and I just finished making hummus in the blender. It contains chick peas, garlic, tahini, lemon juice, and smoked paprika. It's in the refrigerator right now.

My question is: Will this still taste as good if I take it to a potluck Tuesday afternoon? Or should I make a fresh batch on Monday?

    It will not taste as good, it will taste better because the spices will "marry".
  • The typical rule on prepared food is that it is safe for 7 days if temperature controlled. I learned that from food and sanitation certification classes. I buy all natural prepared hummus and eat it up to 7 days after opening and it always tastes as good as the first day and there aren't really any more ingredients than what you have listed. I bet three days will be ok. At the very least you won't kill people. : )

    I make hummus every once in a while. It's good for a week.
