Have you ever been tested for a gluten sensitivity? That could be a major reason for you not able to maintain weight. Also, if you want to GAIN weight, eat at least 3000 calories a day. It worked for me. I was 115#, 5'4", and my goal was to gain 10 lbs. Ate that much and it worked. Lots of HEALTHY fats (aka real butter (ditch the margarine), coconut oil (lots and lots of coconut oil), EVOO), plenty of protein. If you eat wheat, I'd say to cut it out for 30 days just to see how your body responds.

I am concerned that I will lose the body I have worked so damn hard to achieve.

you wont lose fitness, if you keep exercising, but you need to come to the realisation that you WONT keep the body that you have now.

you will increase your bodyfat a little, but also potentially gain a little muscle, but your body will change.

you say you can eat at maintenance ok, so may be try increasing really slowly, 50 cals a week. at the end of the day you are not going to get fat by putting to weight, you are going to get healthy!
