If you have a food processor throw in a raw chicken breast (really chilled or slightly stiff/frozen) cut in half and spin the sharp blade a few times. Results: finely chopped but not a slimy mess, very good for sauteing in pan with other veggies, stir fry, pizza topping, etc!!! And so easy!! Wish I had thought of it sooner. :)

Chicken pizza I made last night (super easy!) Next time I'll freeze or put in fridge half the chicken/onion/jalapeno to use on another pizza, or wrap filling or on a salad..but I didn't think of it at the time.
