In a roasting pan combine desired quantities/variations of...

Baby potatoes with skin
peeled cubed sweet potatoes
mushrroms
carrots
sweet pepper chopped
peeled garlic whole or very coarsely chopped
sweet onion coarsely chopped
kosher salt
ground pepper

spray pan with fine mist of cooking spray. Add veggies. season as desired with salt/pepper
roast for 2 hours on 350 covered with foil. take of oven and let rest for 1/2 hour.

ridiculously low in calories and fat, high in nutrition, savoury/tasty and filling.

somtimes I'll cut up some browned turkey bacon and mix it in after it's cooked for a bit of protein.

even better the next day, and works well done in a foil pack on the bbq

this is my go to meal when I'm really hungry and want something easy to make.

    Yes, I do something similar (depends on what veggies are in the fridge!) and serve it alongside just about any kind of meat/chicken etc.
    And if you have leftovers - it makes a great frittata - just heat up the leftovers in a little frying pan, pour over a couple of beaten eggs. Cook it on a low heat, then sprinkle a little bit of cheese on top and put it under the griller. This is good hot and even better cold.
