South Beach for Vegetarians?

Hello all,
My hubs just went to the doctor and was just told he should start eating low GI foods, because type 2 diabetes is prevalent in his family. I am a vegetarian. I don’t eat any meat or fish [ I do eat dairy]. We run 4-5 times a week for about 18-22 miles. We’re currently training for a half marathon, so that mileage will increase. Our diet is carb heavy because of the combination of running & me not eating meat. I’d like to avoid cooking 2 meals every night. Are there any runner vegetarians who do South Beach and are successful? Can you share any tips?
