Hey All,
I'm new to this community, and am very impressed with the support that folks offer here. A bit of a back story: 4 years ago I lost 43 pounds. Life happened and through my choices - mostly poor choices - I put 45 pounds back on in 6 months. I struggle with portion size and moderation, however I prefer to cook with whole foods and try to avoid the mega processed foods. After living abroad and moving to a small prairie community, I've put on even more weight. I have made a decision to make healthier food choices.
Cut to today, I'm struggling to loose weight and have recently recovered from my second blood clot. My first blood clot was 3 feet long, and this one was a mere 6 inches. I have a blood condition which promotes clotting, and having my second clot means that I am on Warfarin - Coumadin - long term. So, why am I posting this here? Vitamin K. Vitamin K affects how my body metabolizes Warfarin. So, I need to keep my VK intake consistent but low. What is VK? VK is found in all the good foods: spinach, lettuce, beet greens, kale, seaweed, greens, oats, soybeans, canola, green tea, etc... I've talked to a nutritionist and have a bit of a snapshot of what food in my life will look like. I'm allowed to have 1-2 servings of VK a day. If I one day decide to have a salad and then the next day decide not to have a serving of VK then my blood viscosity will be affected. So, I need to commit to having 1-2 servings a day of VK.
I'm hoping that you wonderful folks can help me think of some great salad alternatives. Vitamin K is often found in protein powders, so adding it to my morning smoothy is not an option I'm comfortable with right now. Having a salad for lunch is not an option that I'm comfortable with right now. Fruits, something that I enjoy is higher in natural sugars than VK foods making my food intake a bit more tricky. Grapefruit is off the table, as it is known to affect my meds.
Is there anyone out there who is in the same boat as I?
