How do I know what to call certain exercises or workouts in order to track it here? I've been logging 30 day shred as circuit training but what if I do a simple "target workout" video like Michele Rogers Glute Grind? How do I log something like that?

Its all a generality. Circuit training / calisthenics / aerobics.
If you can save up for a heart rate monitor you can add the calories in manually0 -
Honestly the calorie burn per exercise I witness tends to be off than what the actual calorie burn should be. (Tends to be lower than what predicted) Therefore I track my own workouts and then just input cardio quick calories so I get a more accurate track0
