Single, EASY Recipies

Hi All,

Does anyone have any suggestions on healthy, EASY, one person recipies? My husband just started working nights, so it looks like I'm going to be eating alone with no accountability and want to make sure I'm still being healthy.

    what types of foods do you like?
    I often make a big batch of a few things, then freeze them separately. And not full meals either, like a nice minestrone soup.
    Then when you heat it up, cook up some chicken, meat, turkey, etc and add!

    I also freeze individual servings of rice.

    I guess you can make anything in smaller portions if you only take out enough food for one person.

    You could take a pita, slice in half (through the side not the top) and add cheese veggies and (cooked) chicken. Heat in the oven and you get a single serving of quesidillas.

    Or you can make omelets, fill with veggies. Turkey bacon and light wheat toast on the side.

    Baked potato with a protein and veggies.

    Im also a big fan of healthy sandwiches, sweet potato fries on the side...

    I cant cook but those are some things I usually eat haha

    Get your hands on a Hungry Girl cookbook (or google their name and the word "recipe") they have amazing 1-person dinners. I particularly like their stuffed portabellos recipe, which I make with sweet potato or diced butternut squash instead of summer squash.
