Fantastic alternative to potato chips!

I have an abundance of summer squash in my garden right now, so I have been looking for creative new recipes to try. In doing so, I stumbled upon a simple recipe that actually is a great snack that really satisfies my potato chip cravings without breaking the caloric bank! Even my anti-veggie 11 year old son approves of "squash chips!" :happy:

Squash Chips

Fresh yellow summer squash
Salt/ seasonings of choice
Cooking spray

Preheat oven to 200 degrees.
Spray baking sheets with cooking spray.
Slice squash as thinly as possible.
Place slices in a single layer on baking sheets (you will need approximately one sheet per squash).
LIGHTLY season your squash with salt and pepper if you wish. You will definitely want to use a light hand as the slices are thin and will shrink during cooking which concentrates the saltiness. It is very easy to overdo it.
Bake for 2-3 hours until crispy. Very thin slices will be perfect in 2 hours.

I am not sure how well these will "keep." It hasn't come to that for us. We eat them all before they even cool off! :laugh:

    I dehydrate them as well as cucumbers! The cucumbers I dip in ranch. Yummy!

    You can also make potato chips in the microwave (I was totally skeptical but I just made a batch and I'm addicted!)

    Slice a potato very thinly (I have a crappy Oxo mandoline and I use the first setting). Spray a plate with low/no cal oil and arrange the potato slices on it so they don't touch. Sprinkle with a tiny bit of salt and put in the microwave on high for about four minutes. Turn the slices over and microwave for another 3-4 minutes (or until they start to brown). Let cool (they get crispier) and enjoy! One potato was two batches in the microwave for me so it takes a while but soooo worth it, they taste just like store bought chips! Apparently, if you dip them in vinegar before microwaving, they taste like salt and vinegar (and my mom's contribution - dip in dill pickle brine for dill pickle flavour)!!

    Nice suggestions! I love chips but I know the normal ones are sooo bad for me. I'd love to try these versions :)

    Thanks! I will try this for sure. I was currently grilling/baking sweet potato slices but this sounds like a great addition.
