In to hear about any veggie soups that aren't loaded
with sodium. Now I want Minestrone!0 -
This is a recipe which my friend made to can and send off to university with her children.
1 quart diced carrots
1 quart chopped onions
2 quarts tomatoes (chopped)
1 quart string beans (chopped)
1 quart chopped celery
1 quart kernel corn
3 green peppers
2 red peppers
2 tsp. salt
1tsp. pepper
1 quart potatoes( optional-they tend to turn dark after being stored a while)
Pace all veggies in large pot and just cover with water. Cook for 20 minutes. Then pack into prepared jars and cook 1 1/2 to 2 hours. This cooking time is for the old hot water canner. You could find the proper time for a pressure cooker in your book that came with it.0 -
