Chile- Lime Shrimp Farfalle Pasta (clean eating)
Started eating clean at the beginning of the year and love it. Hope ya'll enjoy this recipe!
CHILI-LIME SHRIMP PASTA
Clean Eating
8oz Whole Wheat Farfalle Pasta
1 1/2 Tbsp Olive Oil, divided
1 Red Bell Pepper, Thinly Sliced
1 Green Bell Pepper, Thinly Sliced
1 Large Purple Onion, Thinly Sliced
1/8 tsp & 1/4 tsp Sea Salt, divided
Black Pepper, to taste
1 Cup Frozen Whole Kernel Corn
5 Green onions, Thinly Sliced
1 lb Shrimp, Peeled, Deveined & Tails removed
1 1/2 tsp Chili Powder
1/2 Packed Cup Chopped Fresh Cilantro
1 Lime, Juiced
Cook Pasta according to package (al dente) Drain & set aside
In a large skillet, heat 1/2 Tbsp oil on medium-high heat. Add pepers & onion, 1/8tsp salt, and black pepper and cook stirring occasionally until tender and lightly browned (about 10-12 minutes). Add corn & cook stirring often until heated through out (about 2 minutes). Stir in green onions and transfer to a large bowl. Stir in Pasta.
Reduce heat to medium and add remaining 1 Tbsp oil. Season shrimp with 1/4 tsp salt & chili powder and add to skillet. Cook until shrimp are pink in center (about 5-6 minutes) and add to pasta mixture. Add cilantro and lime juice and toss to coat. Enjoy!
