Chocolate Coconut Haystacks - SF and LC

1 TBSP Peanut Butter - I use Jif Crunchy
1/2 tsp butter or FOC - I use Smart Balance
1/4 cup SF chocolate chips

Heat above ingredients in microwave for about 30 secs until melty. Stir and add:

3 TBSP unsweetened coconut - I use NOW organic
1 packet AF sweetener - I use Splenda

Stir well and spoon onto wax paper or small plate. Makes 3 large cookies. put in fridge until hardened...or eat warm with a spoon! ;-)

These are just nummy! 82 calories per cookie. and 3 net carbs.

    I also like that this is something I can make in a coffee mug in the microwave and it only takes less than a minute to put the whole thing together! You can skip the butter or smart balance, but I find it tastes just a little better with it added.

    I love these so I want to make sure I get the right ingredient just wasn't sure what you mean by SF chocolate chips

    Sorry. Sugar Free chocolate chips. But if you don't like sugar free products (because of sugar alcohols or other reasons) you could also use dark chocolate to keep it low cal.

    Sorry...I'm pretty lazy and tend to post from my phone so it's hard to type. But that's why I put what I use.

    FOC = Fat of Choice - butter or smart balance is what I use
    SF = Sugar Free
    AF = Artificial Sweetner

    And I had to google what SMH stood for!! LOL :blushing:
