Something Different for Breakfast - Muffins
I'm getting sick of oatmeal for breakfast, so I made this bread recipe into muffins, and they are great! I posted the recipe as written, and noted the changes I made.
Ingredients
1 cup white flour
1 cup wheat flour
1 cup rolled oat (Quaker Old Fashioned Oats)
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 1/2 teaspoons cinnamon
1/4 teaspoon ground allspice
1/4 teaspoon freshly ground nutmeg
1 teaspoon salt
4 eggs (or Egg Beaters to cut some calories) - I used eggbeaters
1 1/4 cups white sugar - I used 1/4 c brown sugar and about 3/4 c of splenda
1/4 cup oil - I forgot to add the oil. The texture may be a little different, but it saves 500 calories!
1/2 cup applesauce
2 medium overripe bananas, mashed (the riper, the sweeter)
1 teaspoon vanilla
2 cups shredded zucchini
1 cup raisins
Directions
1 Preheat oven to 350 degrees.
2 Whisk together white flour, wheat flour, oats, baking powder, baking soda, cinnamon, allspice, nutmeg, and salt.
3 In a separate bowl, beat the eggs.
4 Add the sugar, oil, applesauce, and mashed bananas to the eggs; mix well.
5 Add the vanilla.
6 Combine the wet and dry mixtures. Stir until just combined.
7 Fold in the zucchini and raisins.
8 Pour into 2 lightly greased loaf pans (9x5-inch).
9 Bake for 45-50 minutes or until a knife comes out clean.
As mentioned above, I forgot to add the oil, which was not on purpose, but I would continue to omit it when making these in the future. I made these into muffins (I got 21), and made sure not to overbake them. I think it took somewhere between 20 and 30 minutes. I put them into the freezer once they were cool to help prevent drying them out. One other change I made was to use 1/4 brown sugar and about 3/4 cup splenda rather than the sugar. I also used eggbeaters - 286 calories for 4 eggs vs. only 120 calories for 1 cup of eggbeaters. With my changes and accidental ommission, these are only 108.9 calories each, and two of these make a very flling breakfast!

msh - the original recipe said you could use pumpkin instead of banana if you want. No amount was given , so you would need to eyeball 2 banana's worth!0
