So this Sunday is Father's Day, as you all know, and I want to make the dude a Coconut Cream Pie in celebration. I am the worst cook on the planet. Anyone know of any recipes that are easy???
I've googled a few that are low calorie and some that are not. I just wondered if anyone had any unique spins on theirs or recipes that are kitchen-illiterate-proof.

My husband isn't really a fan of cream pies, so I typically just make him a sammich.0

If I have her make one, then I'm going to have him try mine first and if I can tell it tastes like ****, I'm going to let him eat the one that she made. I want to show that I put the effort in though and... Eh.. I just want him to appreciate it, but not get sick, ha ha.0 -
If you're that worried you'll mess it up and aren't too familiar with cooking, I'd stick to a classic version of coconut cream pie for now. Also, I don't believe in low fat desserts for special occassions like birthdays. If you're having dessert, really HAVE dessert! Just fit it into your calories or get in a workout... or do nothing, one day will make no difference. I've tried this recipe, it's very easy but results are so yum.
Ingredients
* 1 cup sweetened flaked coconut
* 1.5 cups coconut milk (canned)
* 1.5cups half-and-half
* 2 whole eggs and 1 yolk, beaten
* 3/4 cup white sugar
* 1/2 cup all-purpose flour
* 1/4 teaspoon salt
* 1 teaspoon vanilla extract
* 1 (9 inch) pie shell, baked
* 1 cup frozen whipped topping, thawed
Directions
1. Preheat oven to 350 degrees F (175 degrees C).
2. Spread the coconut on a baking sheet and bake it, stirring occasionally, until golden brown, about 5 minutes.
3. In a medium saucepan, combine the half-and-half, eggs, sugar, flour and salt and mix well. Bring to a boil over low heat, stirring constantly. Remove the pan from the heat, and stir in 3/4 cup of the toasted coconut and the vanilla extract. Reserve the remaining coconut to top the pie.
4. Pour the filling into the pie shell and chill until firm, about 4 hours.
5. Top with whipped topping and with the reserved coconut.
